Wild Rice Stuffing
- 1 package Turkey Giblets Or Chicken Gizzards (16 Oz.)
- 4 cups Water
- 6 ounces, weight Long Grain And Wild Rice Blend *
- 1 whole Celery Rib, Chopped
- 1 whole Small Onion, Chopped
- 1/4 cups Butter
- 2-1/2 cups Herb-seasoned Bread Stuffing Cubes, Crushed
- 1-1/2 cup Chicken Broth
- Remove liver from giblets packet, if desired. Place giblets and water in saucepan. Cover and simmer 2 hours or until tender.
- Note: I use chicken gizzards instead of giblets. I also season cooking water and use this as my broth.
- Meanwhile, prepare rice according to package directions. I use Uncle Ben's 5 minute quick cook.
- In a small skillet, saute celery and onion in butter; add to rice. Drain and dice giblets. Stir stuffing cubes, broth and giblets into rice.
- Spoon into a 1 1/2 quart baking dish. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until heated through.
