Wild Rice Stuffing

  1. Remove liver from giblets packet, if desired. Place giblets and water in saucepan. Cover and simmer 2 hours or until tender.
  2. Note: I use chicken gizzards instead of giblets. I also season cooking water and use this as my broth.
  3. Meanwhile, prepare rice according to package directions. I use Uncle Ben's 5 minute quick cook.
  4. In a small skillet, saute celery and onion in butter; add to rice. Drain and dice giblets. Stir stuffing cubes, broth and giblets into rice.
  5. Spoon into a 1 1/2 quart baking dish. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until heated through.
