Wild Spanish Rice
- 1 teaspoon Olive Oil
- 1/2 whole White Onion, Chopped
- 1 whole Green Pepper, Seeded And Chopped
- 1 cup Wild Rice Medly (I Used A Mix From Costco)
- 2 cups Chicken Broth
- 14 ounces, fluid Canned Diced Tomatoes
- 1 teaspoon Cumin Powder
- 1 teaspoon Chili Powder
- 1 teaspoon Dried Oregano
- 1/2 teaspoons Salt
- 1/2 teaspoons Paprika
- 1/2 teaspoons Garlic Powder
- 1/4 teaspoons Cayenne Pepper
- In a large saucepan, heat olive oil over medium heat. Add chopped onion and green pepper. Saute until fragrant, then add remaining ingredients. Bring to a boil, then reduce heat, cover and simmer for 30-40 minutes. Remove from heat and allow to sit for 5 minutes. Fluff with a fork and serve!
