Winter Fruit Salad With Citrus And Honey Dressing
- 1/4 cups Granulated Sugar
- 1/4 cups Honey
- 1 Tablespoon Cornstarch
- 1 Tablespoon Orange Zest
- 1/4 cups Orange Juice
- 1 Tablespoon Lemon Juice
- 1/4 cups Water
- 2 Vanilla Beans, Split In Half Lengthwise With Seeds Removed
- 3 Kiwis, Skinned And Chopped
- 1 cup Red Seedless Grapes
- 1/2 Pineapple, Skinned, Cored And Chopped
- 1 Blood Orange, Skinned And Partitioned With Membranes Removed As Best You Can
- 1 Mango, Skinned And Chopped
- 10 Kumquats, Cut In Half
- 1/4 cups Pomegranate Seeds
- In a small saucepan, whisk together the sugar, honey, cornstarch, orange zest, orange juice, lemon juice, water, vanilla bean seeds and vanilla bean pods. Bring the mixture to a boil over medium heat, then reduce the heat to a simmer and cook for about 4 minutes, continuously stirring so that the sugar and starch dissolve. Remove from heat and transfer immediately to another bowl, cover and refrigerate.
- Meanwhile, get your fruit ready. Once your fruit is chopped and ready, combine all but the pomegranate seeds in a large bowl. Remove the dressing from the fridge and discard the vanilla bean pods. Gently pour the dressing over the fruit and gently fold everything together to combine. Now, gently stir in the pomegranate seeds.
- Cover and refrigerate for an hour before serving.
