Winter Fruit Salad With Lemon Dressing
- 1/2 cups Sugar
- 1/3 cups Lemon Juice
- 1 teaspoon Dijon Mustard
- 2/3 cups Vegetable Oil
- 1 head Romaine Lettuce
- 2/3 cups Shredded Mozzarella Cheese
- 1 cup Unsalted Cashews
- 1/4 cups Dried Cranberries
- 1 whole Pear, Peeled, Cored And Cubed
- 1 whole Apple, Peeled, Cored And Cubed
- 1 Tablespoon Poppy Seeds
- Combine the sugar, lemon juice, Dijon mustard and vegetable oil in a container with a tight fitting lid. Set aside. Wash and cut the Romaine lettuce into small bite sized pieces and place into a large bowl. Shred the mozzarella cheese and set aside.
- Just before serving, peel and cube the pear and apple (I use Gala) into 1/2-inch cubes. Top the lettuce with cheese, cashews, cranberries, pear cubes, apple cubes and sprinkle with poppy seeds. Shake the dressing ingredients to combine and pour as much as desired over the top of the salad. Toss lightly and serve immediately.
