Winter Salad With Basil Vinaigrette
- 3 cups Mixed Greens
- 1 Large Pear
- 1 Apple
- 1/2 Pomegranate
- 2 Tablespoons Walnuts, Chopped
- FOR THE DRESSING:
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Rice Vinegar
- 2 Tablespoons Basil, Lightly Dried
- 1/4 teaspoons Dijon Mustard
- 1 Tablespoon Greek Yogurt, Plain, Fat Free
- 2 drops Lemon Juice
- 1/4 Tablespoons Honey
- 5-1/2 Tablespoons Water
- 1/8 teaspoons Garlic Powder
- Lay the greens in a dish. Cut up pear and apple in slices or bite-sized chunks (whichever you prefer). Each salad gets half an apple and half a pear. Organize fruits on the plate as desired.
- Combine dressing ingredients and mix well. It helps to use a container with a lid so you can shake it. Dress each salad, top with walnuts, and enjoy!
