Spicy Noodle Salad
- 2 packages Chicken Ramen Noodles
- Eggs
- 3 whole Serrano Chile, Sliced With Seeds
- 1 whole Medium Onion, Chopped
- 1 cup Grape Or Cherry Tomatoes
- 1 head Broccoli Florets
- 1 cup Baby Carrots
- 3 teaspoons Reduced Sodium Soy Sauce
- Boil noodles from the ramen package (set aside season packet). I just heat water in kettle and pour over noodles in a bowl. While noodles are boiling:
- Cook eggs in a pan like you would an omelet, cut up eggs and then add some olive oil to the pan, add onion and cook until tender.
- Once onion is tender add season packet, drained noodles and vegetables. Add 3 splashes or more of soy. Cover to steam the vegetables for about 5 minutes.
- You can serve with any meat on the side, or add sliced deli meat to the noodles.
- I've used Asian chiles, serranos, and jalapenos for the peppers...any of them would work.
