Spice N’ Crumb Banana Bars
- 2 cups Flour
- 1-1/2 cup Sugar
- 3/4 cups Packed Brown Sugar
- 1 stick Butter, Softened
- 1 cup (2 Small) Thinly Sliced Ripe Bananas
- 3/4 cups Flaked Coconut
- 1/2 cups Sour Cream
- 1 whole Egg
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Ground Nutmeg
- Preheat oven to 350F.
- Combine the first 4 ingredients in bowl of mixer and mix on very low speed until crumbly. Press only 1 1/2 cups of the mixture into an ungreased 9 x 13" pan.
- Then reserve 1/2 cup of the remaining mixture for the topping and set aside.
- To the remaining mixture in the bowl, add the remaining ingredients in the recipe.
- Beat at medium speed for 1 minute or until blended.
- Spread over crumb crust and sprinkle with reserved 1/2 cup of crumbs.
- Bake at 350 degrees F for 30-40 minutes or until light golden brown. Cool and cut into bars.
- HINT: When spreading a batter over a crumb crust try first to spoon it as evenly as you can over the crust and then even it out gently with an offset knife/spreader or a silicone spatula.
