Reuben Meat Loaf
- 1 (11 oz.) can condensed tomato soup
- 1 lb. ground beef
- 1 (12 oz.) can corned beef, finely chopped
- 2 eggs, slightly beaten
- 2 Tbsp. chopped parsley
- 1 (8 oz.) can sauerkraut, drained and chopped
- 1/2 c. shredded Swiss cheese
- 1/2 tsp. caraway seed
- 2 slices Swiss cheese, cut in triangles
- 1 c. bread crumbs
- 1 large clove garlic
- 2 tsp. prepared horseradish
- Thoroughly mix 1/4 cup soup, meat, bread crumbs, eggs, parsley and garlic.
- On foil or wax paper, shape into a 10 x 15-inch rectangle.
- Combine sauerkraut, shredded cheese and caraway; spread over meat.
- Roll into loaf.
- Bake at 350u0b0 for about 1 hour, or until done.
- Combine rest of soup and horseradish; pour over loaf. Place cheese triangles on top.
- Bake an additional 5 minutes.
