Oatmeal Biscuits
- 1/4 c. regular oats (uncooked)
- 1/2 c. all-purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- dash of salt
- 1 1/2 tsp. brown sugar
- 2 Tbsp. reduced calorie margarine
- 1/3 c. nonfat buttermilk
- 2 tsp. all-purpose flour
- Mazola spray
- Place oats in electric blender; process until oats are ground. Combine first 6 ingredients; mix.
- Cut in margarine until mixture resembles coarse meal.
- Add buttermilk; stir well. Sprinkle 2 teaspoons flour over work surface.
- Dump dough and knead 10 to 12 times.
- Roll out to 1/2 inch thick.
- Cut into rounds with 2-inch cutter.
- Put on cookie sheet coated with Mazola.
- Bake at 400u0b0 until brown (10 minutes).
- Makes 4 biscuits, 111 calories each.
