Greek Onions(6 Servings)
- 3 Vidalia onions
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 c. Ricotta cheese
- 1/2 c. Feta cheese
- 1 Tbsp. Italian herbs
- 1/4 tsp. cayenne pepper
- 2 eggs, beaten
- 2 Tbsp. flour
- 1/2 c. grated Swiss or Parmesan cheese
- 4 slices cooked bacon, crumbled
- Slice onions into 1/2-inch slices.
- Layer in bottom of 10-inch pie plate that has been prepared with nonstick vegetable spray. Thaw, drain and squeeze all water from spinach.
- Mix the next 7 ingredients together.
- Pour over onions.
- Top with grated Swiss or Parmesan cheese and bacon.
- Microwave, uncovered, at High power for 10 to 15 minutes, turning dish 1/4 turn every 3 to 4 minutes. Let stand 5 minutes before serving.
