Fruit Cake

  1. Mix raisins, apricots, prunes, nuts and orange juice in a bowl.
  2. Cover and let stand several hours, stirring once or twice. Grease one large 9 x 5-inch loaf pan or 2 small 2 x 3-inch pans. Line with foil.
  3. Drain the fruits, reserving the liquid; add water if necessary to make 1 cup.
  4. In a large bowl, mix together bread mix, egg and the cup of liquid.
  5. Stir until all dry ingredients are completely mixed; add fruits.
  6. Pour into prepared pans.
  7. Bake in 300u0b0 oven for 1 hour and 40 minutes for large pan; 1 hour and 20 minutes for small pans.
  8. Cool in pan 15 minutes.
  9. Remove from pan; take off foil and cool completely.
  10. May be stored in refrigerator 2 to 3 weeks in plastic wrap or foil.
