Zesty Chocolate-Walnut Cake
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 2 Tablespoons Cocoa Powder
- 1 teaspoon Salt
- 2 teaspoons Instant Coffee Powder
- 1/2 cups Walnuts, Chopped
- 4 Tablespoons Orange Zest
- 1/4 cups Olive Oil
- 3/4 cups Powdered Sugar
- 2 whole Large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 cups Hot Water
- 1/2 teaspoons Vinegar
- Preheat oven to 180u0b0C (355u0b0F).
- In a medium bowl, sift flour, baking powder, baking soda, cocoa powder, salt, and coffee powder together. Mix everything till cocoa is completely combined and the mixture looks brown. Add chopped walnuts and orange zest and set aside.
- In another bowl, whisk oil and sugar till it forms a creamy mixture. Add eggs, vanilla extract, water and vinegar. Whisk on medium speed till everything is mixed together completely.
- Lightly and slowly fold in (mix) the dry ingredients to the wet mixture, making sure no lumps remain. Bake for 40 minutes. To rest for doneness, insert a toothpick at the center of the cake and if it comes out clean, cake is done.
- Cool the cake and then serve as desired. (I served it with a zesty orange-vanilla ice cream.)
