Holiday Rice Dressing
- 1 lb. ground pork
- 1 lb. ground beef
- 2 large onions
- 1 bell pepper
- 3 ribs celery
- 3 pods garlic
- 1 handful parsley
- 5 c. cooked rice
- 1 can mushrooms, chopped (save juice)
- 1 c. pecans, chopped
- 1 bunch green onions, chopped
- salt and red pepper to taste
- Cook pork for 10 minutes; stir often.
- Add ground beef.
- Cook 15 minutes.
- Add onions, garlic, bell pepper and celery.
- Stir well.
- Cover tightly and cook slow for 40 minutes, stirring often. Add salt, pepper and mushroom water.
- Cook 5 minutes more.
- Add cooked rice, mushrooms and pecans.
- Stir well.
- Cover tightly and cook very low until heated thoroughly.
- Add parsley and green onions just before serving.
