Blueberry Cinnamon French Toast Casserole
- 4 whole Eggs
- 1 cup Milk
- 1/2 teaspoons Vanilla
- 1 Tablespoon Sugar
- 1/2 teaspoons Cinnamon
- 1 pinch Salt
- 1/2 loaves Day Old French Bread
- 1 cup Blueberries
- In a large bowl, whisk together the eggs, milk, vanilla, sugar, cinnamon, and salt. Tear the bread into bite-sized chunks and add them to the egg mixture. Toss the bread in the egg mixture until most of the liquid is absorbed. Generously grease an 8x8 baking dish and transfer half of the bread mixture to the dish. Sprinkle on the blueberries and top with the remaining bread mixture. Cover tightly with plastic wrap and place in the fridge overnight. In the morning, remove the plastic wrap and place in a 350u0b0F oven for 30-40 minutes, depending on how crispy you want the top. Serve with maple syrup.
