Fast And Easy Jambalaya
- 1/2 tsp. lemon pepper
- 1/2 tsp. garlic powder
- 1 1/4 lb. boneless chicken breasts, in 1/2-inch cubes
- 3 Tbsp. oil
- 1 c. chopped onion
- 12 oz. smoked Polish or kielbasa sausage, cut in 1/2-inch slices
- 16 oz. jar picante sauce
- 14 1/2 oz. can stewed tomatoes
- 15 oz. can LeSueur peas, drained
- 2 2/3 c. hot, cooked instant rice
- Sprinkle lemon pepper and garlic powder over chicken cubes. Heat oil in large skillet.
- Cook chicken in oil 5 minutes or until done.
- Add onions and sausage; cook additional 5 minutes.
- Keep stirring.
- Stir in picante sauce and tomatoes.
- Reduce heat to medium; cook 12 minutes.
- Add peas; cook additional 2 or 3 minutes or until heated through.
- Serve over cooked rice.
- Makes 4 (1-cup) servings.
