Romanian White Cabbage Salad (Salatǎ De Varzǎ)
- 1 head (about 2 Lb. Size) White Cabbage (You Can Use Pre-shredded Cabbage)
- 1-1/2 teaspoon Salt
- 1 bunch (small) Parsley, Dill Or Thyme
- FOR THE DRESSING:
- 4 Tablespoons Sunflower Or Other Vegetable Oil
- 3 Tablespoons White Wine Or Apple Cider Vinegar
- 1 Tablespoon Fresh Lemon Juice (optional)
- Freshly Ground Black Pepper, To Taste
- Cut cabbage into quarters and remove the stalk. Wash each quarter of the cabbage. Shred cabbage leaves by slicing the quarters head into very thin sections.
- Add shredded cabbage to a bowl and toss with the salt. Set aside for 30 minutes.
- Squeeze the shredded cabbage, either using your hands or a dish towel. Discard the water that is released.
- Wash and dice fresh herbs and to the cabbage.
- For the dressing, whisk oil, vinegar and lemon juice. Grind fresh pepper over the salad. Toss the salad with the dressing.
