Cherry Almond Biscotti
- 1-3/4 cup All-purpose Flour
- 1 cup Whole Wheat Pastry Flour
- 1 cup Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1-1/2 teaspoon Orange Zest
- 1 Tablespoon Orange Juice
- 2 Tablespoons Butter, Melted
- 1/2 teaspoons Almond Extract
- 3 whole Large Eggs
- 1 cup Dried Cherries, Roughly Chopped
- 1 cup Sliced Almonds, Toasted
- Preheat oven to 350.
- Mix dry ingredients (except cherries and almonds).
- In another bowl, mix wet ingredients.
- Add wet to the dry. Fold in cherries and almonds.
- Place dough on lightly floured surface & knead 10 times. Split dough into two equal loaves & shape each into an oblong loaf.
- Place loaves on a greased baking sheet. Bake for 25 minutes. Remove from oven and allow to cool for at least 10 minutes.
- Carefully cut each loaf into 18-20 slightly separated pieces.
- Reduce oven temperature to 250 and bake another 20-25 minutes til almost completely firm. Remove and cool completely.
