Banana Berry Muffins
- 1/2 cups Butter, Softened
- 1/2 cups Sugar
- 2 Tablespoons Ground Flax Seed
- 6 Tablespoons Water
- 2 whole Bananas, Mashed
- 1/2 cups Applesauce
- 1/2 cups Slivered Or Chopped Almonds
- 1 teaspoon Vanilla
- 1/2 cups Whole Wheat Flour
- 1/2 cups Wheat Germ
- 1/2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 1 cup Frozen (or Fresh) Mixed Berries, Thawed
- 1 cup All Purpose White Flour, + 1 Tsp
- Preheat oven to 325. Grease muffin pan.
- Cream butter and sugar in a large bowl.
- In a second small bowl, toss berries with 1 tsp flour & set aside.
- Mix flax with water in small bowl.
- Add the bananas, applesauce, vanilla, almonds & flax to the creamed butter and sugar. Mix.
- Sift dry ingredients together and add them to the wet ingredients in the large bowl.
- Fold in floured berries.
- Pour into muffin pan. Bake 20-25 minutes.
