Asparagus Puffs

  1. Bring to boil milk, water, butter, salt, cayenne and coriander. Reduce heat to low. Add flour all at once. With wooden spoon, beat until it pulls away from bottom and sides. Let cool 4 minutes. Transfer warm dough to food processor. Pulse 5 times. Add eggs, one at a time. Process until dough is smooth and shiny. Heat oven to 400u0b0. Butter 2 baking sheets. Line with paper. Butter paper. Blanch asparagus and chop. Mix asparagus and cheeses into dough. Spoon rounded teaspoonfuls. Smooth with brush. Bake 1 sheet at a time for 25 minutes.
