Easy Low-Fat Lasagna
- 1 lb. box lasagna noodles (raw)
- 1 jar spaghetti sauce (26 oz.)
- 2 (10 oz.) pkg. frozen spinach, thawed and drained
- 1 qt. low-fat cottage cheese
- 1 c. low-fat Ricotta cheese (optional)
- 1 c. shredded skim Mozzarella (optional)
- In a 10 x 13 x 2-inch microwave-safe dish, begin layering with sauce in bottom of pan.
- Next, layer uncooked noodles, then spinach, then cheese(s), then noodles, sauce, spinach and so on. Try for 4 layers noodles minimum, ending with sauce on top of the last noodle layer.
- Cover with heavy plastic wrap/wax paper and vent 1 corner.
- Cook in microwave on High for 17 minutes.
- Let stand 2 minutes.
- Rotate 1/2 turn; cook at Medium for another 17 minutes.
- Remove; let stand 5 to 10 minutes.
- Can sprinkle shredded Mozzarella or Parmesan on top before serving.
- Serves 6 to 8.
