Simply Carrot Cake And Cream Cheese Frosting

  1. Carrot Cake:
  2. Combine oil and sugar. Beat well.
  3. Beat in eggs - One at a time at high speed.
  4. Add flour, soda, salt and cinnamon. Mix well.
  5. Fold in carrots.
  6. Grease and flour pan(s).
  7. Bake in layers or in 13 x 9 inch oblong pan.
  8. Bake at 350 degrees for 35-40 minutes.
  9. Icing:
  10. Cream together cream cheese and butter.
  11. Add the powdered sugar and the vanilla.
  12. Beat until creamy.
  13. Ice cake and share with those you love.
