Zucchini Sundae Brownies
- FOR BROWNIES:
- 1/2 cups Vegetable Oil
- 1-1/2 cup White Sugar
- 2 teaspoons Vanilla Extract
- 2 cups Flour
- 1/2 cups Unsweetened Cocoa Powder
- 1-1/2 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 cups Shredded Zucchini
- 1/2 cups Chopped Maraschino Cherries
- 1/2 cups Mini Marshmallows

- FOR FROSTING:
- 6 Tablespoons Unsweetened Cocoa Powder
- 1/4 cups Margarine
- 2 cups Confectioners Sugar
- 1/4 cups Milk
- 1/2 teaspoons Vanilla Extract
- 1. Preheat oven to 350 degrees. Grease a 9x13 baking pan.
- 2. In a mixing bowl, mix together oil, sugar and 2 tsp vanilla until blended well. Combine flour, 1/2 c. cocoa, baking soda & salt; stir into the sugar mixture.
- Fold in zucchini, cherries & marshmallows. Spread evenly into the pan.
- 3. Bake about 35 minutes, until brownies spring back when touched.
- 4. FROSTING: mix together 6 tbsp cocoa, margarine, confectioners' sugar, milk and 1/2 tsp vanilla. Pour frosting over cooled brownies and then enter bliss with every bite.
