Zucchini Sundae Brownies

  1. 1. Preheat oven to 350 degrees. Grease a 9x13 baking pan.
  2. 2. In a mixing bowl, mix together oil, sugar and 2 tsp vanilla until blended well. Combine flour, 1/2 c. cocoa, baking soda & salt; stir into the sugar mixture.
  3. Fold in zucchini, cherries & marshmallows. Spread evenly into the pan.
  4. 3. Bake about 35 minutes, until brownies spring back when touched.
  5. 4. FROSTING: mix together 6 tbsp cocoa, margarine, confectioners' sugar, milk and 1/2 tsp vanilla. Pour frosting over cooled brownies and then enter bliss with every bite.
