Amish Cinnamon Bread

  1. If you have never tried the whole Amish Friendship Bread thing, here is a post to get you started:

  3. Day 1: (The day you baked or received the starter) Do nothing.
  4. Day 2: Mush the bag.
  5. Day 3: Mush the bag.
  6. Day 4: Mush the bag.
  7. Day 5: Add 3 ingredients.
  8. Day 6: Mush the bag.
  9. Day 7: Mush the bag.
  10. Day 8: Mush the bag.
  11. Day 9: Add 3 ingredients.
  12. Day 10: Mush the bag, and now it's time to bake:
  13. Measure out 1 cup of starter into each of 2 fresh bags. Give 1 to a friend and keep one for yourself.
  14. Preheat oven to 350u0b0F. Prepare 2 large loaf pans by greasing and dusting with a teaspoon of cinnamon-sugar.
  15. Beat eggs, oil, sugar, and vanilla 1 minute. Add the remaining starter (should be 2-3 cups) and mix lightly. Next add the flour, pudding, baking powder, baking soda, and salt. Mix until combined. Pour into the loaf pans. Sprinkle cinnamon-sugar on top, and use a knife to swirl it in a bit. Bake loaves for 45-50 minutes until brown.
  16. Notes: Do not allow any metal utensil or mixing bowl to touch the starter you need to keep. Do not refrigerate. If air gets in the bag, let it out. It is normal for batter to rise, bubble, and ferment. Our starter gets poked and mushed anytime.
  17. Use your imagination for options:
  18. Bake the batter into plain muffins, then dip the tops in melted butter and cinnamon-sugar (or skip the cinnamon-sugar but add pumpkin and nutmeg)
  19. Substitute applesauce for some of the oil
  20. Add blueberries or dried fruit and nuts to the batter, or chocolate chips on top
  21. Substitute cornmeal for the flour on baking day and make it into cornbread
