Bacon, Cheddar, Scallion Beer Bread
- 3 cups Unbleached White Flour
- 1 teaspoon Salt
- 1 Tablespoon Granulated White Sugar
- 1 Tablespoon Baking Powder
- 1 can (12 Oz. Size) Beer, Such As Coors Or Bud, Something Not Too Strong Flavored
- 1 cup Diced Cheddar Cheese
- 1 cup Sliced Green Onions (scallions)
- 1 cup Cooked, Diced Bacon (save The Grease)
- 1/2 cups Liquid Bacon Fat (leftover From Cooking Bacon) Or Melted Butter
- Preheat oven to 350 degrees (F).
- Stir together flour, salt, sugar and baking powder with a whisk. Pour in beer, stir to combine. Mix in cheese, scallions and bacon.
- Pour 1/4 cup of bacon grease into the bottom of a 9" x 5" loaf pan. Scrape the bread batter mixture into prepared pan and the smooth top so it's fairly even in the pan. Pour remaining 1/4 cup of bacon grease (or melted butter) over the top of the bread.
- Place loaf pan on a cookie sheet. Place in oven, bake for 60 minutes or until knife inserted in center comes out clean.
