Christmas Salad – Apple, Pear, And Pomegranate
- FOR THE SALAD:
- 1 whole Honey Crisp Apple (you Can Change To Your Preference), Thick Julienned
- 1 whole Bosc Pear, Thickly Sliced
- 1/2 whole Lemon Juice
- 1/2 cups Fresh Pomegranate Seeds
- _____
- FOR THE DRESSING:
- 3 Tablespoons Pom Wonderful Juice
- 3 Tablespoons Sparkling Apple Cider
- 1 teaspoon Dijon Mustard
- 1/4 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 2 Tablespoons Extra Virgin Olive Oil (optional Depending On Your Preference)
- Mix sliced apple and pear in a bowl. Squeeze lemon juice over them. This is to prevent apple from getting brown too fast.
- Make a dressing by combining Pom juice, apple cider, Dijon mustard, and salt and pepper in a small bowl. Taste to correction. You can add olive oil if you wish. I added it the first time but omitted it later times. I find omitting olive oil suits my taste buds better. Add pomegranate seeds. Mix to coat.
- Pour dressing over the rest of the salad when ready to serve. Serve immediately or leave it in the fridge until you are ready to serve.
- Note: you can double the proportion to the number of your guests.
