Unbelievably Good Chocolate Chip Cookies
- 2-1/2 cups Oatmeal
- 2 cups All-purpose Flour
- 1/2 teaspoons Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 cup Butter
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 2 cups Semi-Sweet Chocolate Chips
- 2 ounces, weight Ghirardelli Semi-sweet Chocolate Baking Bar
- Measure oatmeal first, and blend it in the blender until it is a fine powder. Mix with flour, salt, baking powder and baking soda. Set aside.
- In a separate bowl, cream butter and both sugars. Add eggs and vanilla and mix well. Combine with flour mixture.
- Break chocolate bar* into small chunks. Add chocolate chunks and chocolate chips to dough and stir until combined.
- Bake for 16 minutes at 300 degrees on an ungreased cookie sheet.
- *The beauty of this recipe is you can make it as sweet as you like. I like semi-sweet chocolate so it is not too sugary tasting, but you can use milk chocolate or dark chocolate if you choose. I like Ghirardelli the best, but you can use Hershey's or Symphony too! Same goes for the chocolate chips!
