Chicken Corn Saute(Low Fat, Low Calorie)
- 1 Tbsp. chili powder
- 4 boneless, skinless chicken breast halves
- 2 medium green bell peppers, cut in strips
- hot pepper sauce (optional)
- 1/2 tsp. salt
- 2 Tbsp. vegetable oil, divided
- 1 c. onion, chopped
- 1 medium red bell pepper
- 10 oz. frozen whole kernel corn, thawed
- Cut chicken into bite-size pieces.
- Combine chili powder and salt in a shallow dish.
- Add chicken and turn to coat.
- Heat 1 tablespoon of oil in a large skillet on medium high heat.
- Add chicken, cook until no longer pink in center.
- Remove to serving dish.
- Heat remaining oil in skillet.
- Add onion.
- Cook and stir for 2 minutes or until tender.
- Add bell peppers, cook and stir 3 minutes or until crisp-tender.
- Add corn, heat thoroughly, stirring occasionally.
- Return chicken to skillet to reheat.
