Soft Microwave Caramel Popcorn
- 2/3 cups Popcorn Kernels, Popped Or 2 Bags Plain Microwave Popcorn Popped
- 2 sticks Butter
- 3/4 cups Light Brown Sugar
- 2 cups Mini Marshmallows
- 1 teaspoon Baking Soda
- Pop popcorn and place in large bowl.
- Combine butter, brown sugar, and marshmallows in microwave safe bowl and cook on high for 4 minutes, stopping and stirring the mixture after every minute.
- After 4 minutes, add baking soda to caramel mixture and stir mixture until combined and frothy. Pour over popcorn and stir to cover popcorn completely. Cool and serve. Store in covered plastic container.
- I often form popcorn into balls while mix is still warm but not hot. To do this, I lather my hands in butter to keep popcorn from sticking to me and then roll into balls. Then cool completely.
