Bacon Waffles With Sherry Syrup

  1. 1.) Combine sherry and maple syrup in a small saucepan and cook at medium-low heat for 30-40 minutes (stirring every 4-5 minutes). The idea is to reduce the mixture until it thickens to an almost syrup like consistency.
  2. 2.) While the sherry/syrup mixture is reducing, roughly cut the raw bacon into small pieces.
  3. 3.) Cook the chopped bacon in a frying pan over medium heat until half way cooked (the bacon will cook further in the waffle iron).
  4. 4.) Remove the half-cooked bacon from the pan, place on a paper towel to soak up the excess fat and set aside.
  5. 5.) In a mixing bowl, combine the flour, brown sugar, sugar, baking powder, cinnamon and salt.
  6. 6.) In a separate bowl combine eggs, milk, melted butter and vanilla. Mix until eggs are thoroughly integrated.
  7. 7.) Combine the dry and wet ingredients, stirring until smooth.
  8. 8.) Heat waffle iron.
  9. 9.) Once the sherry/syrup mixture has thickened, add 2 Tablespoons of butter, stir until completely melted, and reduce heat to low.
  10. 10.)Once the waffle iron is heated and ready, spray with a non-stick spray.
  11. 11.) Pour desired amount of batter onto bottom of waffle iron and sprinkle a handful of bacon (equivilant of 2 bacon slices) onto to the top of the batter.
  12. 10.) Cook according to manufacturer's instructions, then remove waffle from iron and top with Sherry Syrup
  13. Enjoy!
