New Year’S Soup
- 1 package (16 Oz. Package) Dried Black-eyed Peas
- 3 cans (14 Oz. Can) Chicken Broth
- 2 cans (14.5 Oz. Can) Diced Tomatoes With Celery, Onion And Green Pepper
- 1 can (10 Oz. Can) Diced Tomatoes And Green Chiles
- 2 cups Diced Cooked Ham
- 1 whole Large Onion, Chopped
- 7 cloves Garlic, Crushed
- 3/4 teaspoons Salt
- 3/4 teaspoons Freshly Ground Black Pepper
- 1 package (1 Lb. Package) Chopped Fresh Collard Greens
- Hot Sauce, to taste
- Place peas in a 6-quart slow cooker. Cover with water to 2 inches above the beans; let soak for 8 hours. Rinse and drain; return peas to the slow cooker. Stir in the broth and diced tomatoes, ham, onion, garlic, salt, and pepper. Add greens, cover and cook on low for 10 hours or until peas and greens are tender. Serve with hot sauce.
