Nick'S Chili
- 3 lb. chopped chuck or shredded chuck roast beef
- 2 (16 oz.) cans kidney beans, drained
- 1 large chopped onion
- 3 cloves garlic, minced
- 2 large bell peppers, chopped
- 2 to 3 chopped chili peppers (number varies to degree of heat desired)
- 2 (16 oz.) cans whole tomatoes, break up with fork
- 1 can tomato paste
- 1 (16 oz.) can imported beer
- 3 sq. unsweetened chocolate, grated
- 3 Tbsp. chili powder
- 1 tsp. salt
- 1 Tbsp. oil or cooking spray
- In large saucepan, heat oil (or spray with Pam before heating) and saute meat.
- Add onion, peppers, chilies, garlic, spices and salt.
- Add chocolate, tomato paste, whole tomatoes, beer and 1/2 cup water.
- Add beans.
- Bring to boil, lower heat.
- Cook 1 hour, uncovered.
