Spicy Pasta Pie

  1. Preheat oven to 350u0b0.
  2. Grease 9-inch pie plate or 13 x 9 x 2-inch rectangular baking pan; set aside.
  3. In 10-inch skillet over medium flame, cook tomatoes, onions, mushrooms and peppers.
  4. Stir in spaghetti sauce; set aside.
  5. In large bowl, combine 1/4 cup of Parmesan cheese, 1 egg and margarine.
  6. Add hot spaghetti; toss to mix well.
  7. Spread spaghetti mixture on bottom and up side of prepared pie plate, making 1/2-inch rim.
  8. In small bowl, combine Ricotta, parsley, remaining egg and remaining 1/4 cup Parmesan cheese.
  9. Spread mixture over bottom of crust.
  10. Top with vegetable mixture.
  11. Bake 30 minutes.
  12. Sprinkle with Mozzarella cheese.
  13. Bake 5 minutes more or until cheese melts.
  14. Let stand 5 minutes.
  15. Cut into wedges.
