Spicy Pasta Pie
- 1 c. dried tomatoes
- 1 medium onion, chopped
- 1/2 c. green onions, diced
- 1 c. sliced mushrooms
- 1/4 c. each: green and sweet pepper
- 3/4 c. spaghetti sauce
- 3 oz. Mozzarella cheese, shredded
- 3 oz. grated Parmesan
- 2 eggs
- 1 Tbsp. margarine, melted
- 3 c. spaghetti, cooked
- 1 c. Ricotta cheese (skim)
- 2 Tbsp. chopped parsley
- Preheat oven to 350u0b0.
- Grease 9-inch pie plate or 13 x 9 x 2-inch rectangular baking pan; set aside.
- In 10-inch skillet over medium flame, cook tomatoes, onions, mushrooms and peppers.
- Stir in spaghetti sauce; set aside.
- In large bowl, combine 1/4 cup of Parmesan cheese, 1 egg and margarine.
- Add hot spaghetti; toss to mix well.
- Spread spaghetti mixture on bottom and up side of prepared pie plate, making 1/2-inch rim.
- In small bowl, combine Ricotta, parsley, remaining egg and remaining 1/4 cup Parmesan cheese.
- Spread mixture over bottom of crust.
- Top with vegetable mixture.
- Bake 30 minutes.
- Sprinkle with Mozzarella cheese.
- Bake 5 minutes more or until cheese melts.
- Let stand 5 minutes.
- Cut into wedges.
