Asparagus & Caramelized Onion Quiche
- 1 whole Pastry Shell (frozen Is Fine!)
- 5 Large Eggs
- 3/4 cups Milk
- 1 pinch Salt And Pepper
- 1 bunch Asparagus, Cooked (Steamed Or Roasted)
- 1 Large Onion, Finely Sliced And Caramelized
- 1-1/2 cup Shredded Old Cheddar Cheese
- Prepare pie shell according to package directions.
- Set oven temperature to 380u0b0F.
- In a medium bowl, beat eggs and milk. Add salt and pepper and mix well.
- Place cooked asparagus and caramelized onions evenly in the bottom of pie shell. Pour egg mixture over top and sprinkle the cheese throughout (you may want to use a fork to gently push it down so it doesn't burn in the oven).
- Cook for 30-40 minutes, until top is lightly golden and eggs are no longer runny (they should be firm, with no gooey spots).
- Cut into 6 equal portions and serve with a side salad!
