Okra And Tomatoes
- 16 ounces, weight Frozen Okra
- 3 slices Bacon, Diced Into Small Pieces
- 1 whole Onion, Diced
- 3 teaspoons Garlic (stuff In The Jar)
- 2 cans (14.5 Oz. Size) Diced Tomatoes
- 1 Tablespoon Chicken Bouillon
- 1 Tablespoon Sugar
- Salt And Pepper, to taste
- Start by opening and pouring the frozen okra into a colander. Run some warm water on it to help thaw it out.
- Toss the diced up bacon pieces into a large skillet and cook for just a minute or two. Add the diced onion and garlic to the bacon and saute until browned and tender.
- Add the tomatoes, chicken bouillon, sugar, salt and pepper. Let this simmer for 10 minutes covered.
- Use a clean spoon to taste the tomato mixture to make sure it has plenty of salt and pepper in it to satisfy your taste. Next, add in the okra. Stir it gently just until combined and allow to simmer for an additional 10 minutes covered.
