Chicken In Peanut Sauce
- 1 lb. chicken breast halves, skinned and boned
- 4 oz. vermicelli noodles
- 1/4 c. smooth peanut butter
- 3 Tbsp. soy sauce (preferably low sodium)
- 2 Tbsp. red wine vinegar
- 1 Tbsp. plus 1 tsp. Oriental sesame oil
- 1 clove garlic, crushed
- 1/4 tsp. hot red pepper, crushed
- 3 Tbsp. water
- 1/4 c. julienned red bell pepper
- 1/4 c. julienned cucumber
- 2 c. shredded iceberg lettuce
- In a 3-quart saucepan over high heat, bring 2 quarts water to boil.
- Add chicken breast halves and reduce heat to low.
- Cook 10 to 15 minutes until chicken is cooked through.
- Using a slotted spoon, remove chicken to plate.
- Return water to boil; add vermicelli and cook 5 to 7 minutes until just tender.
