Asparagus Salad With Orange And Poppy Seeds

  1. In a small bowl, combine the orange juice, zest, sugar, red wine vinegar and poppy seeds. Add in the oil and whisk with a fork until combined and all dressing-y.
  2. Bring some water to a boil. Add the asparagus and cook 2 minutes. Drain and rinse under cold water to stop the cooking.
  3. Arrange the arugula, asparagus and red onion on each plate. Top with orange segments, blue cheese and a good drizzle of the dressing.
  4. Season with salt and pepper if desired.
