Layered Mexican Dip
- 2 lb. can refried beans (made with vegetable shortening) or homemade
- 1/2 lb. ground turkey, cooked and drained (white tenderloin, skinless)
- 3 Tbsp. liquid Butter Buds
- 1 large onion, diced
- 3 c. Alpine Lace nonfat Mozzarella cheese
- 1 c. grated Alpine Lace nonfat Cheddar cheese or 1 c. sliced Kraft Free American cheese slices (8 oz.)
- 1 (16 oz.) jar taco sauce
- 4 oz. can chopped green chiles
- 1 c. mock sour cream (1 c. 1% low-fat cottage cheese blended with 2 Tbsp. plain nonfat yogurt and 2 Tbsp. lemon juice in a blender until smooth)
- Brown diced onion in liquid Butter Buds.
- Add cooked ground turkey.
- Stir refried beans into turkey mixture.
- Spread into a 9 x 13-inch casserole dish that has been sprayed with nonfat cooking spray.
- Sprinkle green chiles over top of turkey-bean mixture. Spread half of cheese over this.
- Pour taco sauce over cheese. Sprinkle remaining cheese on top and bake at 400u0b0 for 20 to 25 minutes.
- Cool slightly and spoon mock sour cream to make a cross on top of casserole.
- Serve with Guiltless Gourmet low-fat tortilla chips or homemade low-fat chips.
- Yields 12 servings.
