Honey Cornbread

  1. Preheat oven to 400u0b0F. Lightly grease an 8" square baking pan.
  2. In a large bowl, combine flour, cornmeal, sugar, honey, baking powder, and salt. In a separate bowl or small saucepan, melt butter. Whisk egg lightly while butter cools a bit, then add egg, milk, and vanilla to butter.
  3. Make a well in center of dry ingredients and pour in mixed liquid, stirring lightly until just blended. Spoon the batter into prepared pan.
  4. Bake for 20 minutes, until the bread is a light golden brown and springs back when lightly touched. Allow to cool a bit and then cut into serving size pieces.
