Chocolate Almond Dates

  1. Remove pits from dates and replace with 2 to 3 almonds (use as many almonds as desired, this will vary based on size of date). Make sure the date is wrapped around the almonds tightly.
  2. In a double boiler, melt chocolate with coconut oil if desired. Dip dates in chocolate using tongs and cover each date completely with chocolate.
  3. Place on a baking sheet covered in parchment paper. Sprinkle dates with coarse sea salt and place baking sheet in fridge for at least 1 hour or until chocolate is firm. Keep refrigerated. These dates will last in the fridge for up to 1 week.
