Chicken With Brown Gravy
- 1 large onion, minced
- 1 bell pepper, minced
- 3 ribs celery, minced
- 2 toes garlic, minced
- 1 tsp. parsley
- 1 bay leaf
- 1 tsp. thyme
- 1/2 c. flour
- salt and pepper to taste
- 1 c. oil (approximately)
- 1 whole chicken, cut up or desired chicken pieces
- water
- Kitchen Bouquet
- In Dutch oven, heat oil and brown chicken real well.
- Put vegetables in pot and cook until clear.
- Put about 1/2 cup flour in and cook until brown.
- Put enough water in the pot until desired consistency is reached (about 4 cups).
- Put enough Kitchen Bouquet until rich brown color is achieved.
- Add bay leaf, thyme and salt and pepper to taste.
- Put chicken back in pot and cook until tender, about 1 hour.
