French Market Soup(Serves 10 Plus)

  1. Wash and drain 16 bean and peas mix.
  2. Add 3 quarts water with ham hocks and thyme.
  3. Simmer, covered, 2 1/2 to 3 hours.
  4. Add next 4 ingredients and salt and pepper.
  5. Simmer, covered, 1 1/2 hours until creamy.
  6. Add sausage and chicken; simmer 30 to 40 more minutes.
  7. Add the optional ingredients, if desired.
  8. Best made the day before!
