Aunt Rocky’S Asparagus, Artichoke & Salami Salad
- 12 ounces, weight Asparagus, Cut And Steamed
- 16 whole Kalamata Olives, Halved
- 12 pieces Cara Mia Grilled Artichoke Hearts, Halved
- 3 ounces, weight Thin Sliced Dry Salami (I Use Safeway Select), Chopped
- 3 ounces, weight Mozzarella String Cheese, Sliced Into Rounds
- 3 whole Nature Sweet Cherub Tomatoes, Quartered
- 3 Tablespoons Wish Bone Ristorante Italiano Signature Italian Dressing (See Note)
- 1 Tablespoon Italian White Wine Vinegar (or Other Zero Carb Vinegar)
- 1/2 teaspoons Coarse Ground Black Pepper, Or More To Taste
- In a large casserole dish with a lid, place the chopped asparagus pieces. Steam in microwave 3 minutes. Drain well.
- Add all of the remaining ingredients and toss. Divide onto serving plates. Garnish as desired.
- Notes:
- 1. If you don't have the Wishbone dressing, use any other dressing that is high in fat and very low in carbs.
- 2. I use very skinny asparagus spears for this salad to avoid any pieces that are woody or too fibrous.
- 3. This salad has no greens that will wilt, so it can be made ahead. Great for work or school lunches.
