Cranberry Almond Energy Bites

  1. On a baking sheet place oatmeal and almonds and bake for 8-10 minutes at 350u0b0F, stirring after a few minutes. Set mixture aside to cool.
  2. Melt almond butter in a medium bowl, microwaving for about 30 seconds. Mix in cooled oatmeal almond mixture along with honey, chia seeds, toasted coconut, and low sugar cranberries.
  3. Using a small ice cream scoop, form mixture into balls making them as uniform as possible. Garnish with extra coconut if desired. Energy balls can be stored in an airtight container for up to one week. They can also be frozen and will be good for 3 months.
