Cranberry Almond Energy Bites
- 1 cup Old Fashioned Oatmeal (not Instant Or Quick Cook)
- 1/3 cups Sliced Almonds
- 1/2 cups Almond Butter
- 1/4 cups Organic Honey
- 1 Tablespoon Chia Seeds
- 1/3 cups Toasted Organic Coconut Flakes
- 1/3 cups Low Sugar, Dried Cranberries
- On a baking sheet place oatmeal and almonds and bake for 8-10 minutes at 350u0b0F, stirring after a few minutes. Set mixture aside to cool.
- Melt almond butter in a medium bowl, microwaving for about 30 seconds. Mix in cooled oatmeal almond mixture along with honey, chia seeds, toasted coconut, and low sugar cranberries.
- Using a small ice cream scoop, form mixture into balls making them as uniform as possible. Garnish with extra coconut if desired. Energy balls can be stored in an airtight container for up to one week. They can also be frozen and will be good for 3 months.
