Fruit Cake
- 1 (16 oz.) pkg. graham crackers, finely rolled (about 5 c.)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/4 tsp. ground cloves
- 12 oz. mixed fruit
- 1 c. dates, snipped
- 1 c. chopped walnuts
- 3/4 c. seedless grapes
- 1/2 c. orange juice
- 1/3 c. light corn syrup
- 1 jar cherries
- Combine first four ingredients in a large bowl.
- Add next 4 ingredients, blending well.
- Stir together orange juice and corn syrup; add to crumb mixture.
- Blend until moistened.
- Press firmly into an 8 1/4 x 4 1/4 x 2 1/4-inch loaf pan, lined with aluminum foil; cover tightly.
- Store at least 2 days in refrigerator before serving.
- Makes one 8-inch loaf.
- Cake will keep several weeks in refrigerator.
