Sarah'S Strawberry Surprise

  1. Wash berries under cold water.
  2. Remove hulls; drain.
  3. Put berries into a small bowl.
  4. Mash with a potato masher or the rim of a glass.
  5. Set aside 1 cup to beat into meringue.
  6. Sweeten remaining crushed berries to taste with powdered sugar or honey.
  7. Cover and refrigerate until ready to serve.
  8. In a large bowl, beat egg whites on medium high speed of an electric mixer until they form soft, moist peaks.
  9. Add sugar, about 1 tablespoon at a time, and beating constantly until meringue is thick and glossy.
  10. Add the 1 cup crushed strawberries.
  11. Beat on medium speed just to blend. Transfer meringue mixture to a freezer container.
  12. Cover or wrap well.
  13. Freeze at least 1 hour until solid.
  14. (You can store in freezer up to 1 month.)
  15. To serve, spoon crushed, sweetened to taste berries evenly in the bottom of 4 individual stemmed glasses or shallow dishes.
  16. Top with frozen berry meringue.
  17. Garnish with strawberries and sprigs if desired.
  18. You may use other berries (blueberries, raspberries, etc.).
