Earth Bread
- 3 whole Eggs
- 1 cup Vegetable Oil
- 1 teaspoon Vanilla
- 3 cups Sugar, Divided
- 2 cups Whole Wheat Flour
- 1 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1 teaspoon Salt
- 3/4 teaspoons Pumpkin Pie Spice
- 1/4 teaspoons Cinnamon
- 1 cup Grated Zucchini
- 1/2 cups Grated Carrot
- 1/2 cups Mashed Bananas
- 1/2 cups Chopped Pecans
- 1 cup Water
- 2 Tablespoons Butter
- 1 teaspoon Rum Flavoring
- Combine eggs, oil, vanilla and 2 cups of the sugar in a bowl. Add sifted dry ingredients, mixing well. Stir in zucchini, carrots, bananas and pecans. Pour into 2 greased and floured loaf pans. Bake at 375 degrees for one hour.
- Combine the remaining cup of sugar with one cup of water in a saucepan. Boil for five minutes. Stir in butter and rum flavoring. Remove bread from the oven and poke holes over the top of the loaf using a toothpick or a fork. Spoon syrup mixture over the loaves while they are still in the pans. Allow syrup to absorb into loaves. Remove loaves from pans. Slice and enjoy!
