Nut N’ Grain Pancakes

  1. Preheat griddle at 350 degrees.
  2. Place oats in food processor and pulse, about 7 times. You want them to break up. Be careful not to over process.
  3. Combine all ingredients into a large bowl and stir until well combined.
  4. Melt a Tbs of butter on the griddle and spread out. Using a ladle or 1/4 measuring cup, pour batter, making pancakes about 3-4 inches in diameter. (These pancakes get thick - you may not want them any bigger.) Watch for the tops to bubble. Turn pancakes and cook until golden.
