7-Up Pancakes With Apple Cider Syrup
- 2 cups Bisquick
- 1-1/3 cup 7-up
- 1/2 cups Vegetable Oil
- 1 whole Egg
- 1 dash Cinnamon
- 1 cup Sugar
- 3 teaspoons Cornstarch
- 1/2 Tablespoons Pumpkin Pie Spice
- 2 cups Apple Cider
- 2 teaspoons Lemon Juice
- 1/2 sticks Butter
- Pancakes:
- Mix the Bisquick, 7-up, oil, egg and cinnamon together in a large bowl. The batter will be on the runny side but it rises as it cooks. Cook on a large griddle as you would any other pancake.
- Syrup:
- In a saucepan mix the sugar and cornstarch together. Stir in the pumpkin spice, apple cider and lemon juice. Cook on low heat until thick and combined, then stir in the butter. Serve warm over 7-up Pancakes.
