Delta Dawn Shrimp Pasta
- 4 cloves garlic, minced
- 1/2 lb. smoked sausage, sliced in rounds and quartered
- 4 Tbsp. sweet butter
- 1 bunch fresh parsley, finely chopped
- 2 bunches green onions (tops and bottoms), finely chopped
- 1 lb. fresh shrimp, peeled and deveined
- 1 Tbsp. fresh lemon juice
- 1 pt. heavy cream
- 1/4 c. freshly grated Parmesan cheese
- dash of cayenne pepper
- salt and freshly ground black pepper to taste
- 1 lb. fettuccini pasta, cooked according to pkg. directions
- Add garlic and sausage to a large saucepan and heat over a moderate flame.
- Saute until the garlic is tender.
- Drain any excess oil.
- Add the butter.
- When melted, add the parsley and green onions. Stir well and let the vegetables cook down, about 10 to 15 minutes.
- Add the shrimp, sprinkle with lemon juice and blend well with the other ingredients in the saucepan.
- Stir in the heavy cream and let the ingredients simmer for 5 minutes or until the shrimp are fully cooked and bright pink.
