Amazing Morning Muffins

  1. Preheat oven to 400F. Spray a six cup muffin tin with oil.
  2. Whisk flour, baking powder, baking soda, salt and pie spice in a medium bowl.
  3. In a smaller bowl whisk together egg, yogurt, sugar and vanilla.
  4. Add wet ingredients to the dry stuff and gently mix together. Batter will be lumpy, but you knew that.
  5. Fill the muffin tin and bake 13-15 minutes. Try to let them cool a bit before eating, but if you burn your fingers trying to get them out of the tin, then I understand.
